In 2017 we are once again proud of our 4 returning chefs.
Our executive chef, Dan Rainville started at Shore Acres in 1994, the same year that Déjà vu Restaurant closed in Burlington. He was one of their executive chef’s. Dan lived in Isle La Motte with Peggy, his wife, and two small girls, Meghan and Anna. We approached him about the time Déjà vu was closing and he luckily said yes. That same year his third daughter Rachael was born. All three of his girls grew up at Shore Acres. Meghan is a nurse at the University of Vermont Hospital, Anna is married and along with her husband Joe, they run a very busy landscaping business in Isle La Motte. Rachael will be teaching in Massachusetts and was offered her job even before she graduates this spring.
Dan graduated from Johnson and Wales in Providence, Rhode Island and before Shore Acres he worked in Seattle, Washington, Providence, Rhode Island, Boston, Massachusetts and Charlotte, North Carolina.
We are very proud to have been working with Dan now going on 23 years. Beside his incredible culinary skills he has mentored so many of his crew. Many of them have moved on into the culinary world and three that we know are executive chefs, Scott Myers, Carrie Consentino and Carter Light.
Jeanette came to us in 2009. She graduated from The New England Culinary School in 1999 and began her career as chef, kitchen manager and assistant innkeeper until she landed a job right back at the culinary school where she taught for the next 8 years. The New England culinary downsized and it was time for Jeanette to move on and somehow and luckily once again she found us. We hired Jeanette immediately and along with Dan they operate and run our kitchen like a rising soufflé. With her bakery background she too teaches our kitchen staff many of her baking techniques.
Returning for her 8th year we are so happy to have Jeanette’s expertise.
Kyle Naas, formerly of South Hero, grandson of the late Alan Kinney, started working with us in 2012. Kyle was head chef at Sakuras until it closed in 2011. He graduated from The New England Culinary School in 1999 and began his chef career at the Inn at Weston. After a year he decided to head out west to Steamboat Springs. He returned home to run Sakura and he did so for almost 10 years. The same year Kyle started working with us he married Mary Beth and a few years later became a Dad to Violet. Mary Beth and Kyle are expecting their second baby in June.
For 6 years Kyle has brought to our kitchen sous chef expertise and once again he teaches all beginning sous chef his skills.
Our 4th chef is Paula Paradis. Paula is our newest member. Paula has been working in the food service industry since 1987. Starting out at the SNH Medical Center she cooked, prepared, set up banquets and catered thousands of functions. For a little while she was a stay at home Mom but got right back into the food service business when her children started school. Paula started at Shore Acres in 2014 and we are happy to have her back for her 4th year.
